♡ Refreshing Nectarine and Cheese Salad ♡

On hot summer days all I crave is fresh stuff. Like salads, smoothies, fruits…

This salad is the best thing you can have when you want to be full but you want to eat something fresh and very healthy. It’s the perfect mixture of cold, sweet and salty.

Nectarines are one of the best fruits you can eat in summer. They aren’t overly sweet. The are filled with vitamin C. They are low on calories so if you are trying to lose weight and you are tired of the same old salad you are always eating you can switch it up by making this amazing salad!

Raisins are a hit or miss for people. Some love them and some hate them. Well most people hate them. If you like raisins you could definitely add some in this salad. It makes it taste even better.

I love the way mustard tastes with sweet things. That’s why I wanted to make a mustard dressing for this salad. And trust me it was such a good idea. You really need to try. You will fall in love!

Ingredients:

2 cups greens (i used lettuce)

6 almonds

1/2 nectarine chopped

50 grams cheese crumbled ( I used feta but goat cheese would be better)

Dressing:

1 tbsp lemon juice

1/2 tbsp mustard

1 tsp salt

1/2 tbsp olive oil

Directions:

  1. Chop up the greens of your choice.
  2. Chop up the nectarines
  3. Crumble up the cheese
  4. Cut the almonds in 3 pieces
  5. Mix everything.
  6. Prepare the dressing by mixing everything.
  7. Drizzle the dressing on top.
  8. Enjoy!
